One-pot Lemon Couscous


You are not in a mood to cook. You just want to eat and get on with your work. I don't want to convince you to cook but this only takes 5 minutes! I promise. Its quick, easy and super delicious! Great for a quick lunch or dinner when you are super busy but still want to eat a wholesome healthy meal. Try this easy recipe for one!

What you will need:

  • 1/2 cup Couscous

  • 1 small Carrot

  • 2-3 medium Broccoli florets

  • 1/2 a Red Pepper (optional)

  • Juice of 1/2 a lime

  • 2 tbsp Olive oil

  • Salt to taste

  • 1/2 tsp turmeric (optional)

  • 1 cup Water

  • 1/2 tbsp Chia seeds

  • 1/2 tbsp Flax seeds

How to make:

  • Prep the veggies. I like to chop them big and chunky for this recipe! Cut the carrots in elongated ovals and split the broccoli florets in half

  • In a pot, heat the olive oil. Stir fry the vegetables. Add salt and turmeric. (Don’t be shy to add to add your favorite spices.)

  • Add couscous and give it a mix. Add water till the couscous in covered. Bring to a boil and cover the pot on low heat for 5 minutes.

  • Once the couscous is cooked, squeeze half a lemon into the pot, and give it a good mix.

Serve this lemony bowl of goodness with some delicious plant-based yogurt.
