Broccoli Curry Soup

Delicious curry flavored broccoli with soup veggies! Let's get straight to it!

Ingredients:

1 Leek

1 large Carrot

1/4 of a Celeriac head

1 medium-sized Broccoli

4 tbsp Olive oil

Salt to taste

1 tsp ground black Pepper

1/2 tsp Turmeric powder

1 1/2 tsp Curry powder

500ml Water

Fresh parsley (optional)

Method:

Prep the vegetables. Chop them into small tiny pieces so that it is easy to blend them later.

In a large pot, heat the oil and fry the leek first. Then add carrots and celeriac.

Add salt and turmeric.To achieve a good depth of flavor, fry slowly on medium heat.

Now add the broccoli and fry for another 5 minutes along with pepper and curry powder.

Add water and adjust consistency. Allow to simmer for 5-10 minutes.

Using a hand blender, blend the vegetables to make a creamy soup.

To garnish, use seeds and leek rings :)

Serve with some fresh Rye bread! Guten Appetit!
