Puréed Beet Soup
Feel one with the earth with this beet soup! Raw earthy flavours of the cumin, rosemary and garden cress combined with the natural sweetness of the beets and creamy coconut makes this a really vibrant dish! Want to detoxify your body and hit that reset button? Detoxifying juices, smoothies, fruits and salads are great but you crave for something warm in the cold winter months. SO why not warm soups instead of smoothies? This one is seriously so simple and easy to make and has the best cleansing effect (if you know what I mean wink wink)
So here's what you will need:
4 medium sized raw beetroots
4 tablespoons coconut milk
1 teaspoon cumin seeds
1/2 sprig fresh rosemary
1/2 teaspoon Chilli Powder
1 teaspoon Coriander Powder
Salt and Turmeric
1 tablespoon Sunflower oil
How to prepare:
Peel the beetroots and cut them into small cubes.
Heat some oil in a pot. Add cumin seeds.
Once it has browned and you can smell the aroma add the chopped beetroot.
Add salt and turmeric. Cover and cook on medium heat.
The sweetness from the beets will intensify once cooked. Now add the spices, rosemary, chilli and coriander powder.
Pour in the rich coconut milk that makes the colours pop instantly! Cover and cook until the beetroot soft and tender. Add extra water when needed.
Blend the soup using a hand blender until smooth.
Serve with whole grain rye bread with lots of sunflower seeds
Drizzle extra coconut milk on top and garnish with some lovely garden cress.
